Nom Nom Nom!!!


My latest creation. I had to use up the last of my potatoes, so I made (from scratch) Bacon-Cheddar-Chive-Sour Cream Potato Skins. They were a hit with the kids, as long as they had some ranch to dip the skins in. Personally, I loved it with a small dollop of Sour Cream (as seen above). I took this picture with my cell phone. Not too shabby.

Bake Potatoes at 350 degrees until soft. Remove, cut in half and hollow out potatoes.

In a separate bowl mix together:
Potato centers
Sour Cream
Chives
Shredded Cheddar Cheese
Garlic Powder
and salt and pepper to taste

Put a small layer of filling back into the potato skins, top with cooked bacon and shredded colby, jack and cheddar.

Place potato skins on a cookie sheet and cook at 350 degrees until the cheese bubbles on top. Remove and top with sour cream and chives. Or add a side of ranch.

My Future Wedding Band

I know, I know... all I have been doing is droning on and on about lost love, heartache and breaking up. But I had an epiphany last night, and am now at peace with the direction my life is pointed in. With that said... THIS IS THE COOLEST WEDDING BAND EVER!!!! I plan to have this as my future wedding band. Unless they come out with another model that sports LED lights as well. You can find them HERE

Insomnia

I opened up my blogger to make a post about insomnia and why I can't sleep, but instead found myself having a Déjà vu about doing just that. I was about to post how I can't sleep because I have noisy brain. Endless thoughts about last words written and a broken heart... and then came my Déjà vu. To me, that means I have seen this scenario played out before... in a dream, in my previous life. Either way, to me, it means it was 'in the cards'... supposed to happen. That was an awakening. The very thing that was bothering me, and keeping me up, is now an event that was 'supposed to occur'. Instead of feeling uneasy about what has recently transpired in my life, I now wonder if it was the best thing... for me... for my children. I feel peaceful right now. Maybe this was supposed to happen, the heartache... so there wouldn't be further broken hearts down the road (like my children's). I have always asked one thing of God, "Please spare my children, let any harm happen to me first before they are EVER hurt in ANY manner". "Let me take the blow". Tonight I just realized that my prayers were answered. I may not like the hurt and the heartache, but maybe, just maybe... by me experiencing that now... absorbing the blow now... it saved them from being hurt further down the road. Tonight... I am grateful! Thank you God.

Yearly Ritual For The Lonely

7 years ago I went through a very heartbreaking divorce. I did not wan't to get divorced, but it happened nonetheless. I remember the first Valentine's Day without my husband, it was hard. February 14th has been designated by commercialism, people and history to be the day that you focus on those you love. Now, don't get me wrong... I have children... whom I love and adore. I make an extra effort to assure each of them that they are my special Valentine every year. But a parent-child relationship has a completely different dynamic than that of the ONE person you share everything with. Your partner. When you don't have a partner, Valentine's is a morbid day. I can't think of anything worse than a day where you feel the most alone out of 365 days of the year. So, I decided that NO ONE should EVER feel that alone. So the following year, I asked around, and I found out who my neighbors were. Widows, divorcees, the broken hearted, and some people who had never even experienced love... even though they are much older than I. I hand picked all of the people who I considered "lonely hearts"... and I made treats for all of them, decorated the plates and delivered cards that, in essence, said: "You are loved, someone is thinking bout you". It made me giddy. I have NEVER felt better than when I was running around putting a smile on the faces of those who might not have smiled otherwise. And I have done it every year since. This year I found a special Valentine. I found someone who is so hurt, it breaks your heart to hear of their struggle. Someone who you want to just take in your arms, hold them and tell them, "life will get better". So yes, I hand picked this Valentine. I decided to make a sacrifice for this person. I don't have a lot of money, but what money I had left from a very skimpy tax return I used it to buy something that would sooth this person... make them smile. I bought it to put a smile on this lonely heart's face. I haven't given it yet, so it is still a secret.... but I am giddy like a little child at Christmas to know that soon... they will receive something special and unexpected. To me, it is worth the sacrifice. I love Valentine's Day.... because it's not the day where I get to feel loved by someone close to me... but I get make someone else feel loved... when they didn't feel that way before.
I challenge those reading to do the same... whether it is cookies, a note or a bigger gesture. Find the Lonely Hearts, and let them know they are loved.

I am going to grow my own Perfect World. That way, the next time someone throws that line at me... I will reply, "Well MY perfect world already does that!" (and maybe I'll stick my tongue out right after, for drama's sake... cuz that's how I roll) ha ha

A Secret That No One Told Me

I've been really sick the last 3 days... and am finally on the mend. I think I might have enough energy to tackle some much needed PRE-Spring Cleaning. I have been rearranging my upstairs bedroom and got rid of my full sized bed and replaced it with a KING bed! I have been in heaven. But I had to make some serious room for it. I had to get rid of my old desk, so I began to dismantle it. However, when I was unscrewing it I came across a stripped screw-head (is that what you men call it? I don't know 'tool lingo'). This is nothing new, I see these all the time in children's toys and when you have to take apart a piece of furniture because you've moved as often as I have in the past. Usually I would just force the screwdriver further down into the hollowed out screw-head in hopes of getting enough friction to get it to turn. This would usually end up with me yelling weird phrases and ultimately throwing a toy across the room. =-)
But someone recently revealed a little secret, "Use a rubber band". Seriously? Guess what...? It Works! So, I thought I would pass this little gem of knowledge your way.
(Also) if you ever have a light bulb break off in the socket and need to get the base out... cut a potato in half and twist it into the socket of the broken light bulb and it will catch it and you can un-twist it to pull it out. AMAZING! I love little tricks that make my life easier.

FREE GRAND SLAM BREAKFAST FROM DENNY'S Feb 9th, 2010


Denny’s restaurant chain hopes to score another home run with customers by offering free Grand Slam breakfasts after next month’s Super Bowl.

The 24-hour-restaurant chain will give away its signature breakfasts from 6 a.m. to 2 p.m. Feb. 9 at its outlets across the country. That’s the Tuesday following Super Bowl XLIV.

Famous Singer Blacklisted


A South Florida community watchdog group that monitors sex offenders, 'Protect Our Children', is sending postcards to 1,500 homes to warn parents that former sex offender Pete Townshend is coming to the area to perform at the Super Bowl. He was arrested in 2003 for cruising online sites for photos of child sex. Townshend said he was doing research for a book. He was placed on England's list of sexual offenders for five years.

Protect Our Children’s Kevin Gillick says, “As far as we’re concerned, Pete Townshend could be dangerous for the community. No one who isn’t interested in child sex visits porn sites. And he was on his country’s sex offenders list. Why is he in what amounts to a family event?”

The NFL rejected 'Protect Our Children's' plea to cancel The Who's Super Bowl halftime performance.

I don't watch the Super Bowl... but this time I am pro-actively boycotting it. Good ol' Pete needs to learn that his celebrity-ism is not going to float him through his sick sexual addictions.

How To Make Jalapeno Corn Aebleskivers

I have never intended this blog to be about cooking... this is just my 'current phase'. This blog is all about what is in my head at the time, so unfortunately there will be a lot of A.D.D. posts. Recently I was on a Gizmo Kick, a Twilight Kick, a Viral Video Kick... and somedays I just post random pictures from my life. So, without further ado, here is the video of me making Aebleskivers. Delicious, and if you have a sweet tooth, you should try the chocolate ones!


Fill them with cheese or jam. These mildly spicy Jalapeño-cornbread pancake puffs will leave your mouth watering for more. This makes nice soft, moist, egg-rich aebleskiver! You can get started with these mixes and pans here.

4 Ingredient Chocolate Cake... and DELICIOUS!

Easy Flourless Chocolate Cake

With only four ingredients and three steps, this is an easy flourless cake. And it’s scrumptious—perfect to make for your sweetheart. As with other flourless chocolate cakes, this is dense and chocolatey.

A simple dusting of powdered sugar makes this cake elegant. Drizzle it with raspberry sauce, raspberry chocolate sauce, or chocolate sauce. (A recipe for raspberry sauce follows.) Finally add a scoop of vanilla ice cream or a dollop of whipped cream.

Be sure and use good quality, dark cocoa. I used Ramstadt-Breda Dark Cocoa which has three times the cocoa butter of most national brands. This will not be the same with ordinary cocoa.

8 large eggs
1 cup rich, dark cocoa, Ramstadt-Breda or equal
1 cup butter, melted and cooled slightly
1 1/4 cups granulated sugar

Preheat the oven to 325 degrees.

  1. In your stand-type mixer and with the whip attachment beat the eggs for three minutes at medium speed, until they are bubbly and lighter colored. While the eggs are beating, melt the butter and measure the other ingredients. Measure the cocoa by spooning cocoa into a cup—do not compress the cocoa.
  2. Add the sugar and cocoa and beat in. While the mixer is running, drizzle in the melted butter. Continue beating until mixed. Scrape the batter into the pan.
  3. Bake for 30 to 40 minutes or an insta-read thermometer registers 165 to 170 degrees when inserted into the center of the cake. Cool on a wire rack and then place in the refrigerator to chill. The cake will become dense as it cools. Dust with powdered sugar if you desire.

Yield: 12 servings.

How to Make Raspberry Sauce

Raspberries alone are not tart and flavored enough for a dessert sauce even when thickened with a starch. There are two possible solutions: Cooking the fruit down to concentrate the flavors or adding a jelly for thickness and flavor. This recipe uses the latter.

12 ounces, about 3 cups frozen, unsweetened raspberries
2/3 cup red currant jelly
about 1/4 cup sugar

  1. Thaw and puree the raspberries. Strain them twice through a sieve/strainer or until nearly all of the seeds are removed. Place the puree in a small saucepan. Add the jelly.
  2. Cook, stirring occasionally, until the jelly is completely melted and blended with the fruit. Sweeten to taste with the sugar while it is still hot. Stir to make sure that the sugar is dissolved. Let cool.

Yield: About 1 1/3 cups of raspberry sauce.

What You’ll Need

  • For the cake, you will need a good quality nine-inch springform pan. We recommend our glass-based springform pans. We have baked this cake many times and have not had a single leak. We cut the cake right on the glass base.
  • A good quality cocoa is essential. You want at least 16% cocoa butter. Most store cocoas are 8 to 10%. Ramstadt-Breda cocoa is 24%.
  • An insta-read thermometer. The proteins in the eggs will coagulate at 165 degrees and create the structure for the cake.
  • For the raspberry sauce, you will need a medium sieve/strainer, one about 6 inches in diameter. The mesh in this size of sieve is usually the right size to catch most of the raspberry seeds and still let the puree pass.
  • The red currant jelly gives the puree body, tartness, and color.

On My Wish List

Ahhhh, lunch break. I'm sitting at my desk, just finished a healthy salad that made me feel like a cow or a bunny, 'cuz I was munching on so many weird shaped leaves and carrots. I like eating healthier, and I am ready to take my food to the next level. Now just because I am a Geek Girl doesn't mean I can't "geek-out" over kitchen gadgets. Crazy thing is, I have given all mine away in the past, and have never looked back... until now. I made a New Years resolution a little yearly last year. On the 1st day of November 2009, I vowed that I would cook. Not cook more... just... cook. I am the queen of re-heating, microwaving/nuking, toasting and turning on the stove to boil water for WHATEVER was in a box or a can. I used my title of "Working Mother" as a crutch... an excuse, to not experiment in the kitchen. Because of this, my kids have grown up on Hot Dogs, Mac-N-Cheese, Frozen Nuggets, Fast Food and anything and everything that was frozen boxed or canned. Lets just say, they have not been the healthiest of kids thus far. So I decided to create. I have tried my hand at making up recipes, following recipe cards and try my hand at foreign dishes... as well as fine-tuning my sweet tooth by playing with sugar, eggs, and flower in some of the most delicious creations my tongue has tasted in a while (while still being healthy). It has been fun! Only problem is... I want/need two additions to my kitchen. A mixer and a bread maker. I don't know much about kitchen appliances, so I didn't know where to start. But, being the "Geek girl" I am, I went hunting. After reading consumer reports, forums, baking blogs and inputing my needs and wants from a machine in a pro's and con's list... I decided on two models.

Mark McGwire admits to taking steroids during his home run record seasons in the 90's

Mark McGwire Steroid Parody - "Juice Me Up For the Ballgame" is a parody of "Take Me Out to the Ballgame"




Mark McGwire has admitted using steroids. He released this statement:

“Now that I have become the hitting coach for the St. Louis Cardinals I have the chance to do something that I wish I was able to do five years ago. I never knew when, but I always knew this day would come. It’s time for me to talk about the past and to confirm what people have suspected. I used steroids during my playing career and I apologize.

“I wish I had never touched steroids. It was foolish and it was a mistake. I truly apologize. Looking back, I wish I had never played during the steroid era.

“I’m sure people will wonder if I could have hit all those home runs had I never taken steroids. I had good years when I didn’t take any and I had bad years when I didn’t take any. I had good years when I took steroids and I had bad years when I took steroids. But no matter what, I shouldn’t have done it and for that I’m truly sorry.”

Hence, another reason why you don't use celebrities as role models *cough* Britney spears *cough* Hannah Montana *cough* Tiger Woods *HACK, cough*..... just sayin'

Irish Man + Romance = My Kind Of Movie

Hollywood is finally pulling no-name hotties out of the wood-work. Screw Brad Pitt, Tom Cruise, George Clooney and all the other Hollywood defined "it" guys. They all suck in my eyes, always have. I love the no-name actors. I was obsessed with Gerard Butler before anyone even knew he existed. And now, three new hotties have emerged and are gaining momentum in the popularity department in some of my favorite films to date. Sam Worthington, Mathew Goode, and Robert Pattinson (in that order). Hence why this movie appealed to me. I love the Irish and their accents (ditto with the Scottish ones). I especially love IRISH romantic comedies like "The Matchmaker", "The Quiet Man", "Waking Ned Divine" and "Circle of friends", just to name a few. I have now put this movie on the list! I love it, and I so desperately needed this movie.

Plot line: (no spoilers) A young woman anticipates marrying a guy who just isn't very romantic or spontaneous. She waits and hopes for things that never happen... so she sets off to make those romantic things happen herself... only to stumble upon a sweet down to earth guy who knows how to be romantic, funny and sweet... in Ireland. And thus a romantic comedy ensues. Romance, spontaneity, taking chances, following your heart...*swoon* This movie was just what the love doctor ordered.
(Although Avitar 3D is my 1st choice)

The Cutest 5 Year-Old Girl In the World Saves Her Father's Life

I like to pride myself on being a sassy irreverent chick. I pretend I'm tough, but lets face it... I have hormones. And there is one set of hormones that I can never suppress. I like to call them my "Little Voice Hormones". No, not because I hear little voices, but because when a baby or child speaks it touches my heart. They sound so cute, I can't help but turn to mush. Today as I was going through my news updates at work, I cam across this 911 call with audio. I listened to the whole thing, and actually 'sup-supped' a few times (on the verge of tears). This little girl sounded like she was delivering the best lines ever in a movie about the most heartwarming tale EVER. But, in reality, it was just a little girl... saving her daddy's life.

"The Cutest 5 Year-Old Girl In the World Saves Her Father's Life With A 911 Call ... 'Savannah' called a 911 dispatcher from Hancock County, Indiana after her father began to have a heart attack. She told Jason Bonham that they were in their jammies, that he was having a hard time breathing and that he needed oxygen. As the medics arrived Savannah then began to have a discussion about what to wear."

What a cruel, cruel world... one where I cannot afford a Nexus One. I was excited about the iPhone... and while I still am... THIS phone tops that one. Why? Well, it has features the iPhone doesn't, that I am in need of more. It is a developer's paradise. Come to mama!

911 To Burned Boy's Dad: 'Sober Up'


Seriously people, how many kids lives do we have to put in danger before everyone sobers up? Alcohol is not a good mix with children. If you're gonna drink, lock yourself in a closet.

Here is the drunk 911 call. The call appears to have been made by the toddler's father, Michael Bargeron, of Palm Bay.
The caller told the dispatcher his son had fallen into a fire about 20 minutes prior and the boy's mother took him to the hospital, but he did not know where it happened. He began the call by asking if the dispatcher had heard any reports of a 3-year-old being burned.

"Are you serious? I can't sober up," the caller told the dispatcher when she told him to sober up and find out where his son was burned.

When asked for his name, the caller said, "I'm not going to fall for that trap."

Palm Bay police said Bargeron was drunk at a party and began wrestling with his son near a fire pit. Witnesses told investigators the boy fell into the fire and Bargeron did nothing to get him out.

"He fell. He fell into the fire," the caller said when describing what happened. "Not completely into the fire, but he fell.

The boy's mother rescued him from the flames and took him to the hospital where he was treated for severe burns.

Bargeron, 24, was arrested and charged with aggravated child abuse.


Drunk School Bus Driver Almost Crashes

This story makes me sick to my stomach. No child should go through this. Just watching it gives me anxiety. It was so sweet to see the bigger kids comforting the small ones. I would like to have a windowless room to tell that bus driver how I felt about what she did to those kids.
Here is the video of the bus driver who was drunk behind the wheel with more than three dozen kids aboard her school bus. i HOPE she’s going to spend a lot of TIME in jail.

Watch as one student on the video screames, “Put on the brake!”

This is surveillance video of the dangerous school bus ride in the Alfred-Almond school district . 55-year-old Martha Thompson had a blood alcohol content of .15. At the time, she thought the children were "overreacting". (Proof enough of what alcohol does to your judgement)

In the video, you can hear Thompson say, “Will you guys stop?”

To which a student replies, “Well, you’re not okay and I know it.”

The bus hit high speeds, ran over a mailbox, and started rolling backwards downhill.

A student shouts, “Turn the bus off!”

“No,” says Thompson.

“You’re backing into the freaking ditch, you’re making the little kids cry…Stop!” screams another student.

Finally, the children opened the emergency door in the back of the bus to get out, despite Thompson pleading against it.

Thompson hollers, “You can’t get off the bus!”

UPDATE: The bus driver will spend the next 12 weekends in jail on her guilty plea to 37 counts of child endangerment and driving while intoxicated.

Volusion Update 10/20/09

UPDATE #2:
Well, my store is up and running again. And as expected, no explanation, no apologies, no root cause. I thought maybe... over optimistically... that maybe.... , maybe they had been working on upgrading their system to be more compliant with current browsers and had crashed due to some unforeseen stupidity on their part. While there was a lot of unforeseen stupidity, I was wrong to think they were trying to expand their interface... it is still there... stamped across the top of my page, warning me that my browser and their software are just as compatible as me and my ex. Come on Vortal... get with the times!

Volusion... CRASHES AND BURNS Today

When creating a blog post, it asks if you want to create a link to a web site. For instance, I am Venting/Blogging about Volusion, so I would usually post a link to their site... UNFORTUNATELY none of their links work. They went down hardcore today! Not just their store backend access for merchants, but anyone who created a store through them has lost their shopping cart interface. Their community access to stats and tech support is down as well. Furthermore, they didn't even put up a splash page alerting clients, members and users that they were down and working on a solution. Instead, it just reads as though it never existed, "This web page cannot be found". The store I built over a year ago for our group of #1 radio stations in East Idaho has thrived and has become a popular feature across all of our formats. The Deal of the Week. We direct traffic to this Volusion store on a daily basis. Now our link is dead... completely down and I am unable to access it to even leave our users a message to alert them to the problem. It is so frustrating. Surely Volusion has access to their database of customer emails... surely they could alert their clients about the mishap, and let them know what is happening... surely they have back up plans and mirrored technology.... surely? Doesn't seem to be the case.
*shakes head in disbelief*
Thanks Volusion.... I'm glad to know you are crisis ready. NOT!

Zoey: a heads-up or email alert would have been appropriate for something this big! Can you tell me ANYTHING about what has happened?

I don't like waiting in queue to find out you have nothing to tell anyone.

I love Web Dev!!!!

JADE...

Here is Jade...
Let me tell you a little story about Jade.
Jade is my office "Roomie". He is one of my 'web minions'. He is also a DJ like myself, so we tend to get along quite well. We both have a twisted sense of humor and love being sassy. We always try to "one up" the other when it comes to pulling a prank. Lately, Jade has gone above and beyond and has topped anything that I have done to him in the past.
Jade loves to build, and I tend to have a lot of clutter on my desk... so Jade makes architectural towers out of my crap. Like this lovely tower.

But today, Jade topped them all. Check it. This is my desk at work. Silly Silly Jade!

You Mocked Me Once. Nevah Do It Again! I Died That Day!

Ok... here is the skinny, the poop, the low-down. Twilight is fast approaching, and with it comes excitement and anticipation. Since I work for entertainment media, we are putting together a midnight premiere per my suggestion. Ever since my boss decided to go forward with it, I have not been able to shut up about Edward, Twilight and vampires. I have been working on all the Graphics for print and for web. I was in charge of the hundreds of Twilight posters we got in. I was also the one over-seeing the FREE movie tickets for the premiere... needless to say, I am in heaven. Because of this, every male in the office has taunted me, especially my boss. They love to razz me because I am sooooo passionate about this movie/book series. When my boss talks about the movie around me, he refers to it as "The Dumb Movie" just to get a silly rise out of me... and it works. Today was no exception. I sat down at my computer and saw a cartoon that my boss had drawn of a man in a business suit and tie. In the little talking bubble it said, "Die Edward DIE! Die! And you too Jacob!" I found out later in the day that he had photo-copied a lot of these pictures because I found another one in my DJ headphones, in my water bottle cap, in every one of my desk drawers, and in my camera case etc.... But then he topped off the day by mocking the picture that the graphic designer and I worked on of me and Edward together.

And then he topped off the evening with this little GEM. He cut out one of the other DJ's pictures and put it on Bella's face... and... well... you get the idea.



I've got to learn to keep my obsessions to myself.... lesson learned. =-)

Ever since I moved into my new house, I have kept it clean and organized as much as possible, but the loft, my bedroom, has been a catch-all for things I hadn't unpacked. I finally put everything in it's place instead of living out of plastic tubs and making a bigger mess. I love my room!!!!

That was the only conclusion I could draw once I saw this guy's trailer in front of me as I drove home from work tonight. If this is his business/product name, he might want to re-think it. I almost flagged him down to ask him if he had any Two-Bit, French Whores who are good with dish washing and laundry. I could use a good hooker around the house. I hear they'll do ANYTHING for money!

"Hooker! Hooker, put the wet stuff in the dryer and then mop the friggin' floor!"

Sinner

I confess, I am a sinner. I... well... um... watched the full 8 minutes and 54 seconds of the Twilight movie that leaked on to the internet. The only parts that was new to me was the FULL scene where Bella meets the Cullens and a small snip-it of Edward playing piano... the rest of it was stuff that you see in the promos. The video has been taken down since I took a gander at it, but it was soooooo amazing! The clip was shown at a film festival in Rome. I just hope the movie going crowd in America is as awesome as the crowd in that clip. The girls screamed together, laughed together, swooned together. It filled the whole theater. I hope we have the same thing happen in the theaters here in Idaho. I want to experience it with THAT much emotion! It was soooo cool! (As was the clip I watched... hubba hubba)
